Lima Bean, Fennel and Wild Rice Soup
This is such a great heart healthy soup loaded with fiber and protein along with all the necessary nutrients to provide you with a balanced and yummy meal. Best of all, you can prepare all the basic ingredients ahead of time and throw them together for a quick dinner you can serve with fresh bread and salad.
INGREDIENTS:
Your choice of prepared beans
Your choice of prepared grains/rice
1/2 an onion
1 carrot
2 cloves of garlic
3 bulbs of fennel, sliced
2 Tbsp Olive Oil
Salt and pepper
Veggie stock
INSTRUCTIONS:
Heat olive oil in a soup pot, sauté vegetables until tender and fragrant.
Add veggie stock, beans and rice for the amount of soup you wish to make.
Simmer for 5-10 minutes and serve.
