Tahini Ginger Dressing
With summer right around the corner, winemaker Thérèse Martin shares a great dressing recipe that you can use on fresh salads or as a dip with veggies from the garden. The ginger adds a nice kick to the recipe not to mention its health benefits. Thérèse suggests adding tahini for a nutty flavor which comes from the sesame seeds.
Tahini Ginger dressing:
½ cup raw cashews
¼ cup or more of water( depends on how thick or thin you want it.
¼ cup carrot chopped
½ tahini
1tsp rice vinegar
1tsp coconut aminos
2-3 tbsp of chopped ginger ( customize to your flavor profile)
1tsp Maple syrup or honey
¼ cup fresh lemon or lime juice
2 tbsp sesame oil
1 tsp sriracha sauce
DIRECTIONS:
Soak cashews in water for at least 2-3 hours to soften. I generally just put them in a jar in the refrigerator overnight. Put everything in a high powered blender and blend until smooth. Add water to thin or leave thick for a dip.
